we’ve had our friends from the st. Augustine necessarily on our show many times what I’m excited to be on their turf and actually get a tour to find out how all these spirits are made come with me you’ll learn something so here we are in the belly of the beast this is where the magic happens I’m here with Larry – Larry can you start off by just give me an overview of what’s all happening around us well this is now the st. Augustine distillery the first distillery making bourbon legally in the state of Florida since Prohibition and this basically is where all our magic happens here our bourbon came out just about two years ago our double-cast bourbon I’ve been a big success in fact our double-cast bourbon now recently won the triple gold medal in Chicago at the national micro distillery Awards that’s the top metal they give out Esquire magazine recently did a nice article honest naming our bourbon is one of the best Bourbons in America and this is where that double-cast bourbon is made we kind of start over here in these tanks you see over here I’m kind of numbered f1 down through f5 those are the fermentation tanks where our grains and by the way we’re also up very involved with our local farmers here our corn and our wheat is all grown by local farmers our sugarcane is locally sourced the only thing that we use in our bourbon the barley that we don’t grow here in Florida a little too hot or a barley to grow here we get that from the great state of Minnesota so while local farmer supplies with the grains then we fermentation the great grains right over here in these tanks they’ll spend anywhere from three to six days in those tanks then that will add yeast to the grains that yeast will eat up all the sugars then leave us an alcohol base that is going to go into our mesh tub over here to be cooked then we’re going to move over to our beautiful stills here which are from the vendôme copper and brass where and they’re in Louisville Kentucky and this is still over here is Ella and this one over here is Bessie that’s where our bourbon and vodka and gin and rum are all distilled it really is an art and a lot of science involved in it as well let’s just talk about output you know I see these big barrels here how much do you produce on a daily basis well you’re generally a couple of barrels a day we can produce depending on what we’re producing vodka obviously doesn’t go in a barrel the vodka take-up could be make we can make vodka in a day it’ll come out go into one of these storage tanks here and then it’s ready to go to the bottling area now the gin is is based on arcane neutral spirit basically our vodka and this still you see over here that little baby over there that’s called the botanicals still that’s where we’ll take the cane neutral spirit and infuse our generous to be into it to create gin and the rum is basically similar to the to the vodka but our rum is made from molasses our vodka is made from sugarcane and then when our rum is done that’ll go into a barrel for about a year to be Asian our bourbon barrels Wow so obviously a lot is happening right here so then what’s the next state the next room if you will well the next thing we would do after this is all done here the distilling is completed it’ll go into these containers if it’s vodka gin or if it’s rum or bourbon it’ll go into our barrels to begin its aging process if we like we could take a look at our barrels let’s go do that this is definitely the but one of the most important process of making bourbon this is where the aging happens bourbon must be Asian a brand new oak barrel and these are these barrels right here that come from Louisville Kentucky from the Calvin cooperage and they’re going to spend about two years or so in these barrels before it’s ready to be out of he tasted now you said Oaks I would imagine the reason why I say because it’s important so that helps with flavor definitely when the Bourbon goes into the barrel it’s odorless listen basically tasteless it’s going to get sixty to eighty percent of its of its aroma its taste its character drawing out of the oak barrels yeah so I knew it was an important step but I didn’t realize it was that essential as far as flavor yeah definitely uh it would be wouldn’t be bourbon without being aged in the bourbon barrels that is very cool all right so then from the barrel that goes to thee it’s gonna go to the bottling area which is right across from us and every bottle is hand bottled here by our bottling team and then it’s ready to be boxed like you see over here and go out to our retail partners Ottawa tasting room where our guests here at the distillery get to sample our products a tasting room interesting yeah it’s one of our most popular things here at the distillery we’ve been getting about about a hundred and fifty thousand guests a year here and I also want to point out we just won a major award called the drama Awards and this little gem here in st. Augustine was voted the best whiskey tour in North America we beat out the Kentucky distilleries last year bourbon jaw Buffalo Trace won the year before that makers mark runt won so it’s really kind of unique that the st. Augustine distillery is on the map Wow and then does it cost anything to actually walk through here the tour is free we serve up four different cocktails one made with our vodka rum gin and our bourbon and then we also offer our guests if they’d like to taste any of our spirits neat straight we offer that option as well so they can really get the flavors that we have alright Larry I’m the guest here I’m also a cheap date I say we go on to that next year I’ll be right over here as well we would take the guests next to our tasting room well mark here we are the taste room this is our most popular spot on the tour this is where our guests get to taste our spirits and by the way we are open 7 days a week 10 to 6 for all free tours and the tours are every half hour so come on down and pay us a visit it’s a wonderful wonderful tour all right Larry this looks pretty appetizing here let’s get ready to come in they’re gonna start off with the vodka and vodka tonic cocktail then they’re going to move on to our rum tiki cocktail which is a run with a pineapple coconut mixture then we’re gonna finish up with our botanical gin with a grapefruit hibiscus mixer and all these mixers are all-natural and they’re made for us by with our recipes then after they finish in here then they’re gonna head upstairs to the gift shop to the the bourbon bar again a very very popular spot that’s where they’ll get to sample our bourbon our double-cast bourbon we’re gonna make them a classic cocktail an old fashioned and then we open up the tasting ball for our guests if they like to sample any of our spirits straight Wow something for everyone here thank you so much then to learn more about the st.
